    A genetically modified maize plant wherein said genetic modification is selected from:(a) co-suppression or homology-dependent gene silencing of a 27 kD gamma-zein and said plant has a stably decreased level of a 27 kD and 16 kD gamma-zein protein in the grain of the modified maize plant due to said modification;and (b) co-suppression or homology-dependent gene silencing of a 50 kD gamma-zein and said plant has a stably decreased level of a 27 kD, 50 kD and 16 kD gamma-zein protein in the grain of the modified maize plant due to said modification;and wherein the grain of the genetically modified maize plant has a hard, vitreous endosperm.

    A plant according to any one of the preceding claims further comprising a genetic modification targeting 15 kD beta-zein.

    A plant according to any one of the preceding claims further comprising a genetic modification targeting one or more alpha-zeins.

    A plant according to preceding claim 5 wherein the alpha-zein in selected from 22 kD alpha-zein and 19 kD alpha-zein.

    A plant according to any one of the preceding claims further comprising increased expression, compared to the corresponding unmodified plant, of a nucleotide sequence that encodes the maize 18 kD alpha-globulin or a 50 kD legumin protein.

    A plant according to any one of the preceding claims further comprising increased expression, compared to the corresponding unmodified plant, of a nucleotide sequence that encodes the maize 18 kD delta zein protein.
