    A method for treating a food processing facility, comprising inoculating a food processing facility with an effective amount of euhygienic non-pathogenic, non-spoilage bacteria which are predominantly of the species L. delbrueckii or Hafnia alveii, or a combination of L. delbrueckii and Hafnia alveii, effective to competitively inhibit the growth of spoilage and pathogenic bacteria.

    The method as set forth in Claim 1, wherein equipment used in the processing of food is effectively inoculated with euhygienic bacteria which are predominantly of the species L. delbrueckii or Hafnia alveii, or a combination of L. delbrueckii and Hafnia alveii.

    The method as set forth in Claim 1, further comprising effectively sterilizing a food processing facility prior to said inoculating with euhygienic bacteria which are predominantly of the species L. delbrueckii or Hafnia alveii, or a combination of L. delbrueckii and Hafnia alveii.

    The method as set forth in Claim 3, wherein said sterilizing comprises contacting the food processing facility with an effective amount and concentration of an organic acid solution and/or sanitizer.

    The method as set forth in Claim 1, wherein said inoculation is effective to reduce the opportunity for contact between a food product and spoilage and pathogenic bacteria.

    The method as set forth in Claim 1, wherein said euhygienic bacteria is able to proliferate in a pH environment of from about pH 4 to about pH 7.

    The method as set forth in Claim 1, wherein said euhygienic bacteria is able to prevent substantial discloration of the food products.

    The method as set forth in Claim 1, wherein said euhygienic bacteria comprises predominantly L. delbrueckii .

    The method as set forth in Claim 1, wherein said euhygienic bacteria comprises predominantly Hafnia alveii .

    The method as set forth in Claim 1, wherein said euhygienic bacteria is able to proliferate at temperatures from about -1°C to about 35°C.
