Abstract
Set of molds for cooking food products, such as hams, comprising a plurality of molds mounted on a support frame (5, 6), each mold comprising a channel (2) of substantially U-shaped cross section to form a bottom ( 3) and two side walls (4), forming the upper edges of the side walls (4) wings (7; 7¿) folded, the adjacent wings of the two channels (2) being joined together, characterized by the fact that the joints between wings (7; 7¿) are made by welding the outer edges of said wings, being the edges of said wings (7; 7¿) trimmed so as to delineate notches (8) of thermal passages (10).

DESCRIPTION
Set of baking molds for food products.
The present invention relates to a set of molds for cooking food products such as hams and, more particularly, to a set of this type comprising a plurality of molds mounted on a support frame, each mold comprising a channel of substantially U-shaped cross section to form a bottom and two side walls.
These sets are known, for example, from FR-A-2,485,884.
These sets generally work satisfactorily. However, industrial butchers specialized in sliced pre-cut ham sticks note cross-sectional variations in the length of the stick. In long bars, greater than one meter, this defect is accentuated. This defect is linked to a deformation of the channels, whose rigidity is insufficient when the length is important.
From WO 97/34494 and FR-A-2 731 894, assemblies according to the preamble of claim 1 are also known.
The assemblies according to the first of these documents, made in a single piece, however, present the drawback that the wings between them make it difficult for the heat-transferring fluids to pass. Furthermore, it is difficult to make such folded assemblies.
In the assemblies according to the second of the documents, the stiffness of the upper parts of the channels is obtained by tie rods. However, these tie rods are welded perpendicular to the channel plates, which also presents difficulties.
The present invention aims to alleviate these drawbacks.
More particularly, the object of the invention is to provide sets of molds of the type mentioned above, the channels of which are sufficiently rigid to avoid variations in the section of the ham bar after cooking, and which, nevertheless, allow good circulation of the ham. heat -or frigo- carrier fluids.
To this end, the invention has as its object a set of baking molds according to claim 1.
Thus, the stiffness of the channels is increased, which makes it possible to avoid their section variation when they are loaded. On the other hand, these notches make it possible to leave a free passage necessary for the circulation of the heat -or frigo- carrier fluids.
In a particular embodiment, the wings adjacent to the frame are attached to said frame.
Likewise, in a particular embodiment, said wings are folded substantially parallel to said frames.
The set of molds according to the present invention can also comprise, in the lower part, covers intended to press the products contained in another set located below said set. In this case, the adjacent edges of two covers can be joined to each other.
The connections between the wings and the frame can be made, in particular, by welding the outer edges of the wings.
In addition, braces may be provided connecting the lower parts of the channels.
Said covers can be fixed to said channels by means of said tie rods.
Now, by way of non-limiting example, molds for the particular embodiment of the invention will be described, referring to the attached schematic drawings, in which:

Figures 2 to 4 are partial cross-sectional views of superimposed assemblies according to three different embodiments.
Figure 1 shows a set 1 of molds made up of channels 2 with a U-shaped cross section that form a bottom 3 and side walls 4. The channels are fixed to a rectangular frame formed by two angles 5 in L parallel to the channels 2 , and two end walls 6 that close the channels at their ends.
Feet (not shown) are welded to the angles 5 to allow stacking of a plurality of assemblies 1.
The channels 1 are fixed, first of all, to the frame, in a known way, by means of lugs (not shown) which protrude outside the side walls 4 to penetrate into corresponding holes in the end plates 6.
Furthermore, the upper edges of the side walls 4 of the channels 2 are folded substantially perpendicular to these walls in a plane generally perpendicular to the plane defined by the frame, to form wings 7. These wings form notches 8.
The wings 7 are joined between the notches 8 by welds 9 made along their edge. Thus, thermal passages 10 are delimited that allow the circulation of heat -or frigo- carrier fluids.
Furthermore, the outer flange 11 of each side channel is welded in the same way to the edge of the upper flange 12 of the adjacent angle 5. This angle is in turn notched in such a way that it leaves thermal passages 10 such as before.
Figure 1 also represents covers 13 welded under the bottom 3 of each channel 2. These covers are here constituted by a sheet folded generally in the shape of a U whose edges of the wings are welded to the bottom 3.
During the superposition of two sets, such as set 1, the covers 13 of the upper set penetrate into the channels 2 of the lower set in such a way as to ensure the pressing of the products contained in these channels.
In figure 2, a variant embodiment is seen in which the wings 14 of the covers 13 have their upper edges 15 which in turn are perpendicularly folded as in the case of the edges 7 of the side walls 4 of the channels. There are also formed thermal passage notches.
The edges of the adjacent wings 15 are welded at 16, which also contributes to the rigidity of the molds.
The set made up of the covers 13 is in turn welded at 17 to the set made up of the channels.
In the embodiment of figure 3, the wings 7 '
ES 2 256 185 T3 formed in the upper part of the side walls 4 of the channels are folded twice at 45 °. Furthermore, the rigidity of the lower part of the assemblies 1 is here ensured by braces 18 substantially perpendicular to the longitudinal direction of the channels, welded at the same time between the side walls 4 of the channels and between the wings 14 of the covers.
In the embodiment of Figure 4, the upper parts of the side walls 4 of the channels form a "bulge" 19 into which the downwardly curved edges 20 of the covers 13 'are inserted. Furthermore, in this embodiment, the struts 18 'extend continuously 21 below the bottom 3 of the channels. Covers 20 are welded under these braces 18 ', thus ensuring the connection between the channels and the covers.
