    A meat replica comprising an iron-carrying protein, wherein:a. the meat replica comprises 0.05% or more of the iron carrying protein by dry weight or total weight;b. the iron-carrying protein is selected from hemoglobin, myoglobin, neuroglobin, cytoglobin, leghemoglobin, non-symbiotic hemoglobin, Hell's gate globin I, bacterial hemoglobins, ciliate myoglobins and flavohemoglobins;and c..the iron-carrying protein has been isolated and purified from a non-animal source selected from a plant, fungus or genetically modified organisms such as bacteria or yeast.

    The meat replica according any one of the preceding claims, wherein the meat replica comprises 0.4-1.0% leghemoglobin.

    The meat replica according to any of claims 1 to 6, wherein the meat replica includes one or more reactants selected from the group consisting of fats, protein, amino acids, peptides, nucleotides, organic acids, sulfur compounds, sugars and carbohydrates.

    The meat replica according to any one of claims 1 to 4, 7 or 8, wherein the meat replica comprises pea flour, sunflower oil, glucose and reduced leghemoglobin.

    A meat replica comprising a heme protein, wherein:a. the meat replica contains between 0.01 % and 5 % by weight of the heme protein;and b. the heme protein is selected from hemoglobin, myoglobin, neuroglobin, cytoglobin, leghemoglobin, non-symbiotic hemoglobin, Hell's gate globin I, bacterial hemoglobins, ciliate myoglobins and flavohemoglobins;and c. the heme protein has been isolated and purified from a non-animal source selected from a plant, fungus or genetically modified organisms such as bacteria or yeast.

    The meat replica according to any one of claims 10 to 12, wherein the reactants are selected from the group consisting of amino acids, fats and sugars.
