Ink-jet printing on surface modified confectionery and respective products

Abstract

Modifying the surface of an edible with a high polarity water-based glaze or Polishing gum improves the printing of images on the edibles with low viscosity inks typically used in ink-jet printing. The methods described herein are suited to printing high resolution ink-jet images on edible substrate, such as a hard panned sugar shell confectionery.

    A confection comprising:an edible substrate having a panned sugar shell surface, a modified-polarity coating comprising water, sugar and hydrocolloid which has been dried on the sugar shell surface, and an ink image printed on the modified-polarily coating.

    A method for ink-jet printing on an edible substrate, comprising the steps of:coating a surface of an edible substrate with a hydrophilic substance containing water, hydrocolloid, and sugar to form a polarity-modified surface;and ink-jet printing at a least a first ink-jet image on the polarity-modified surface with water-based ink.
