Brewing apparatus water temperature control

A brewing apparatus (10), such as a coffeemaker, including a hot water heater (14); a first temperature sensor (128) connected to the hot water heater; a second temperature sensor (70) connected to either a cold water inlet (31) to the heater or a hot water outlet (68) from the heater; a pump (18) connected to the cold water inlet (32) for supplying water to the heater; and a controller (16) coupled to the pump (18) and the sensors (128,70). The pump (18) is a variable speed pump. The controller (16) is adapted to adjust the speed of the pump (18) based upon signals from the sensors (128,70).
