Abstract
New preparation of a young fish substitute (I) from surimi and/or fish meat involves repeated mixing of base ingredients with additional ingredients (II), including starch, albumin, water, oil, flavourings, sugar, salt, glutamates and colouring, to obtain at least two pastes (III) of different consistencies and/or colours using differing quantities of (II), followed by compacting and slicing of layers of (III). Also claimed is a slicing extruder (IV) to prepare (I) comprising at least two extrusion compartments placed in series, into which (III) is introduced under pressure, linked to a box in which layers of (III) are built up, compressed and sliced.
