Abstract
Procédé de préparation d'un jus ou d'une purée de végétaux dans lequel, on homogénéise en présence d'eau au moins un végétal frais, le cas échéant sous une atmosphère inerte, de manière à libérer les précurseurs d'arômes et une partie des enzymes endogènes, on incube l'homogénat à une température comprise entre 0°C et 70°C pendant 5 min à 24h, on le transforme le cas échéant en jus ou purée, puis on le pasteurise. Jus ou purée cuit issu de végétaux non blanchis, susceptible d'être obtenu par le procédé, présentant un arôme cru renforcé, et une couleur naturelle mieux conservée que celle d'un même jus ou purée cuit issu de végétaux blanchis. Utilisation d'un jus d'une purée, ou d'un extrait sec de jus ou de purée selon l'invention dans la préparation d'un produit alimentaire.
