    A flavored chewing gum composition having improved flavor perception which comprises a chewing gum base, a sweetener and a flavor containing emulsion system comprising a flavoring oil, an emulsifier having a total HLB value of about 1.6 to about 7.0 in an amount of about 1 to about 15% per weight (relative to the emulsion system comprising the flavoring oil) and an alkyl polyol.

    The chewing gum composition of Claim 1 wherein the emulsifier is a fatty acid ester or a mono and diglyceride, and is preferably selected from the group consisting of glycerol monooleate, propylene glycol monostearate, glycerol monostearate, lecithin, sorbitan monostearate, and mixtures thereof.

    The chewing gum composition according to the Claims 1 or 2, wherein the flavor containing emulsion system is present in an amount of about 2% to about 10% by weight of the chewing gum composition.

    The chewing gum composition according to anyone of the Claims 1 to 3, wherein the flavor containing emulsion system comprises about 19 to about 59% by weight flavoring oil, and about 40 to about 80% by weight of said alkyl polyol.

    The chewing gum composition of Claim 4 wherein the flavoring is present in an amount of about 25% to about 55% by weight.

    The chewing gum composition of Claim 4 wherein the emulsifier is present in an amount of about 3% to about 11 % by weight.

    The chewing gum composition of Claim 4 wherein the alkyl polyol is present in an amount of about 45% to 70% by weight.

    The chewing gum composition according to anyone of the Claims 1 to 7 wherein the flavoring oil comprises natural or synthetic oils, and preferably is a natural or synthetic flavor oil.

    The chewing gum composition according to anyone of the Claims 1 to 8 wherein the sweetener is selected from the group consisting of water-soluble sweetening agents, water-soluble artificial sweeteners, dipeptide based sweeteners and mixtures thereof.

    The chewing gum composition according to anyone of the Claims 1 to 9 wherein the gum base comprises a natural or synthetic rubber.

    The chewing gum composition of Claim 10 wherein the natural rubber is selected from the group consisting of chicle, jelutong, balata, gutta-percha, lechi caspi, sorva and mixtures thereof.

    The chewing gum composition of Claim 10 wherein the synthetic rubber is selected from the group consisting of butadiene-styrene copolymers, polyisobutylene, isobutylene-isoprene copolymers and mixtures thereof.

    A flavor containing emulsion system for incorporation into food products comprising a flavoring oil, an emulsifier having a total HLB value of about 1,6 to about 7,0 in amounts of about 1 to about 15% by weight and an alkyl polyol selected from the group consisting of glycerin, propylene glycol and mixtures.

    A flavor containing emulsion system as claimed in Claim 13 wherein the flavor containing emulsion system comprises about 19% to about 59% by weight flavoring oil and about 40% to about 80% by weight of said alkyl polyol.

    A flavor containing emulsion system according to the Claims 13 or 14 wherein the flavoring is present in an amount of about 25% to about 55% by weight.

    A flavor containing emulsion system according to anyone of the Claims 13 to 15, wherein the emulsifier is present in an amount of about 3% to about 11 % by weight.

    A flavor containing emulsion system according to anyone of the Claims 13 to 16, wherein the alkyl polyol is present in an amount of about 45% to about 70% by weight.

    A method for preparing a flavor containing emulsion system for incorporation into food products according to Claim 13, which comprises:(a) dispersing the emulsifier into the flavoring oil to form a first phase, (b) admixing the first phase with the alkyl polyol until a stable emulsion is formed.

    The method of Claim 18 wherein the flavor containing emulsion system comprises about 19% to about 59% by weight flavoring oil, and about 40% to about 80% by weight of said alkyl polyol.

    The method of Claim 19 wherein the flavoring oil is present in an amount of about 25% to about 55% by weight.

    The method of Claim 19 wherein the emulsifier is present in an amount of about 3% to about 11 % by weight.

    The method of Claim 19 wherein the alkyl polyol is present in an amount of about 45% to about 70% by weight.
