Edible film compositions for processing of meat products
Abstract
A uniform composition of a film for packaging meat products, comprising: at least 5% by weight of gelatin; film-forming material comprising a carrageenan and one or more carbohydrates or proteins; and 8 to 25% by weight of water, wherein gelatin represents 30 to 55% by weight and carrageenan up to 50% of the total weight of gelatin plus said film forming material.
